Sales have cooled off a bit in the ice cream segment, with data from Chicago-based market research firm IRI showing a -0.4% dollar sales decline and only a 0.6% volume sales gain for the category 52 weeks ending Nov. 4, 2018. But growth opportunities can be found in both indulgent formulations and innovative on-trend product development.

Bob Graeter

Head of Quality Assurance, Graeter’s Inc.

Bob Graeter, a member of the fourth generation of Graeter's to own and operate the family business, has been with the company continuously for 17 years. Starting out as a store manager in the early 1980s, Bob has worked his way up to the position of vice president of operations.

Bob heads the company's operations management team which focuses primarily on sourcing and vendor relations, product development and wholesale sales. He also oversees new store development and build-out.

Bob Graeter graduated from Wittenberg University in 1977 with a Bachelor of Science in biology and went on to earn a Master of Business Administration from the University of Michigan in 1984. Outside of the office, he is extremely busy raising three beautiful daughters. He also is active as a deacon and a former trustee of the Wyoming Presbyterian Church. A self-proclaimed foodie and wine geek, Bob is always on the lookout for the next hot new flavor idea to make into a new ice cream, bakery or candy product.

Lynn Dornblaser

Director of Innovation & Insight, Mintel

Lynn Dornblaser brings 30 years of product trend knowledge to Mintel, which she joined in 1998. She applies her unique perspective on the market and new product development to tailored client research and to extensive public speaking.

Prior to joining Mintel, Dornblaser covered new product trends at several trade magazine publishing companies, as editor and editorial director of publication New Product News. She has been quoted by major US news organizations, including The Wall Street Journal, USA Today, The New York Times and CNN. In addition, Dornblaser has also served as keynote lecturer and speaker for numerous industry groups and sales forums.

Dornblaser holds a BS in Journalism from the University of Illinois and has also contributed to a textbook on new product development. She can usually be found in the aisles of a supermarket somewhere in the world.

She has been involved in the food industry since she was 10 years old, baking Swedish coffeecakes for her father to sell at his Swedish butcher shop. Dornblaser is also an avid fly-fisher and enjoys standing in stream with her fly rod and waders.
