With the UK’s hospitality sector generating more than 1m tonnes of waste a year, this is an area operators can not only help save the planet but also save money too.
We’ll be hearing from a range of experts on best practice and top tips on how the sector can increase its green credentials and its bottom line.

Assad Malic Chief communications and sustainability officer Greene King Assad joined Greene King in May 2022 as chief communications and sustainability officer. He is responsible for the pub company and brewer’s environmental and social targets, alongside group strategy, internal communications, press and other external stakeholder communications.
After Assad joined Greene King, ‘Environment and Social’ was added as one of the company’s core strategy drivers and he oversees Greene King’s progress towards net zero, including halving greenhouse gas emissions by 2030.
Prior to Greene King, he was group director of corporate affairs and strategy at Currys plc, which included leading its sustainability strategy. His previous experience includes 17 years in investment banking with banks such as Credit Suisse and Citigroup.
Jon Dale Strategic Corporate Affairs & ESG Lead Punch Pubs & Co Jon Dale leads the charge as the Corporate Affairs & ESG Lead for Punch Pubs & Co, one of the largest pub companies in the UK.
He has over 23 years of experience working with C-Suite executives across hospitality, sports, leisure, retail, travel & tourism and education sectors.
Jon has worked for businesses including Leicester City Football Club, TUI Travel Group, Sainsbury’s Argos and up until February 2021 was Director of Communications at Ei Group plc (latterly Stonegate Group), the largest pub company in the UK.
Jon has been with Punch Pubs & Co since March 2021, and in his role, is responsible for developing, leading and executing the businesses’ corporate communication and sustainability strategy, with a clear focus on communities, environment and people.
Kate Macnamara Corporate Affairs Director for Western Europe Molson Coors Beverage Company Kate Macnamara is Corporate Affairs Director for Western Europe at Molson Coors Beverage Company and, together with teammates from across the business, helps to drive the company’s sustainability strategy forward. Kate is also Chair of the British Beer & Pub Association’s Environment & Sustainability Working Group, a group of sustainability experts from across the brewing and hospitality sectors set up to share best practice and explore ways of accelerating the industry’s journey to a greener future.
Nina Matsunaga Head Chef The Black Bull Sedbergh Born in Germany to Japanese parents, Nina moved to the UK permanently in her 20s, when she met her partner James Ratcliffe while working in Manchester's street food scene.
Since 2012 the couple have worked together on business ventures including The Moocher and The Three Hares, before opening their ‘foodie destination’ and pub with rooms, The Black Bull, in 2018.
In that time Nina has also been named the Craft Guild of Chefs 'Pub Chef of the Year', has earned two red rosettes for culinary excellence and has featured in the UK's top 100 list of the Most Influential Women in the Hospitality Industry no less than three times.
Kate Nicholls, OBE CEO UKHospitality Kate Nicholls OBE has been CEO of UKHospitality, the powerful voice representing the broad hospitality sector, since its inception in 2018, having previously worked as CEO and Strategic Affairs Director of the ALMR, the trade body for eating & drinking out businesses.
Kate is Chair of the Tourism Alliance and co-Chair of the London Tourism Recovery Board, representing the needs of the wider tourism sector in discussions with Government and the Mayor of London. She sits on the Government’s Hospitality, Tourism and Food & Drink Sector Councils and has previously Chaired the Mayor of London Night-time Commission as well as a member of the Mayor’s Covid Recovery Forum. In July 2021, she was appointed as the first Government Disability Ambassador for hospitality, promoting inclusivity. She is Chair of Liverpool ACC, on the board of several industry standards schemes and a trustee of industry charities.
Kate initially worked as a researcher in the House of Commons and European Parliament on food, employment and environmental policy before joining Whitbread to work in Strategic Affairs. She has extensive experience as a political and strategic communications consultant and is a graduate of Fitzwilliam College, Cambridge and Kings College London.
