The European retail market for plant-based alternatives has experienced huge growth in the last two years, and is expected to double in size by 2025. This is thanks in large part to the rising number of consumers who identify as flexitarian; following a diet that mainly consists of plant-based proteins, but still includes some animal-derived products.

This increased interest in alternative proteins is driven both by shifts in buyers’ lifestyles and a deepening awareness of the importance of health and wellbeing. Consumer curiosity, along with growing concerns surrounding sustainability, are also undoubtedly benefiting the plant-based revolution. As the trend expands from niche to mainstream, consumer expectations for plant-based products will continue to grow, and this presents a host of challenges for producers. From taste and texture, to nutritional profile and visual appeal, plant-based products need to deliver an excellent overall experience to have a hope of becoming a hit in an increasingly crowded market.

George Perujo

Director of Product Management Specialty Ingredients


George Perujo is Director of Product Management at ADM, a global leader in human and animal nutrition and the world’s premier agricultural origination and processing company. He is the head of the Specialty Ingredients (SI) business in Europe, a division responsible for producing ADM’s edible bean, protein and Fibersol products, all of which are used in various applications. His responsibilities include marketing, pricing, educating and positioning ADM’s SI range of ingredients in Europe. He is also a key player in the setup of a new business area for ADM, which aims to create custom plant-based protein blends for the Flexitarian, Vegetarian, and Vegan markets. Within the scope of this role George is also responsible for incorporating new ingredients into the business model, including any type of protein, nuts or grains. George joined ADM in 1995 and has held various positions in the company throughout his tenure, working in facilities across the Netherlands, USA and Germany. He holds an MSc in Meat Science and Technology from the University of Bristol, as well as an MBA and a BSc in Chemical Engineering from Haagse Hogeschool.
