Abstract
The keynote session will focus on a conversation with modern, forward-thinking executives on the topic of balancing risks for the safety of consumers, team members, and the environment. Participants will hear how successful food companies manage risks that sometimes compete for investments and leadership attention. Learning how to collaborate with your colleagues from human safety, sustainability, and animal welfare is necessary for you and your company to improve food safety performance and deepen your company's food safety culture. The executives will also share specific challenges and wins from their respective organizations, along with the cultural solutions that help them successfully manage risk.
David McDonald President and Chief Operating Officer OSI Group David G. McDonald was born and raised on a farm in Northeast Iowa and received his B.S. degree in Animal Science from Iowa State University in 1987. Then he joined OSI Group, a multinational food processing company with nearly 60 facilities in 17 countries. Over the years, after serving in a number of capacities, he became President and Chief Operating Officer. Mr. McDonald serves on the Board of Managers for OSI Group and many of its companies. In addition, he held a seat on the Board of Directors of Marfrig Alimentos SA in Brazil, one of the largest fully integrated protein companies in the world. Mr. McDonald was also the Chairman of the American Meat Institute, the meat industry's largest association, and the first Chairman of the North American Meat Institute, which is the new entity merging the American Meat Institute and North American Meat Association. Mr. McDonald remains an active member of the Executive Board of the North American Meat Institute. In addition, he is a member of the Farm Foundation, a nonprofit organization working across the food and agriculture value chain to build momentum behind meaningful solutions to some of the most important challenges facing farmers and the food industry.
Michael Eckhardt Senior Vice President, Chief Legal and Risk Officer, and Secretary Wawa Inc. Michael Eckhardt is the Senior Vice President, Chief Legal and Risk Officer, and Secretary for Wawa Inc. He has responsibility for the Company's Internal Audit, Enterprise Risk Management, Legal, Loss Prevention, Quality Assurance, Risk Management, and Safety teams. Michael joined Wawa in 2005 and became General Counsel in 2011. He previously held the position of Associate General Counsel at Wawa. Before joining Wawa, Michael worked for Dechert LLP and Pepper Hamilton LLP in the Corporate and Securities groups. He earned his B.A. degree in Political Science from American University and his law degree from Temple University. Michael serves on the Board of Directors of Terrazzo Marble and Supply Companies, a 100-percent ESOP-owned company in Illinois, and serves on the Dean's Advisory Board for the School of Public Affairs at American University. Michael also serves on the Board of Directors and as President of the Wawa Associates In Need Fund, a 501(c)(3) dedicated to assisting Wawa associates suffering from catastrophic events in their lives. Michael is a past president of the Greater Philadelphia chapter of the Association of Corporate Counsel.
Randy Huffman, Ph.D. Chief Food Safety and Sustainability Officer Maple Leaf Foods Dr. Randall Huffman (Randy) is Chief Food Safety and Sustainability Officer at Maple Leaf Foods. His role encompasses leadership of Food Safety and Quality, Occupational Health, Safety and Security, Environmental Sustainability, and Animal Care. Randy leads a team that has developed and is executing world-class strategies to deliver on Maple Leaf Foods' commitments to produce safe, great-tasting food produced in a safe work environment, and to become the most sustainable protein company on earth. Maple Leaf Foods' commitment to become a global leader in animal care and to reduce greenhouse gas emissions from the company's operations to levels in line with the Science Based Targets Initiative has given the company clear and bold targets to achieve. Randy joined Maple Leaf Foods as Chief Food Safety Officer in 2009, and in 2011 assumed leadership of Six Sigma and Food Quality. In 2014, he was appointed Senior Vice President of Operations, in addition to his role leading Food Safety and Quality. In the following three years, he led Manufacturing across 12 prepared meats plants, as well as Corporate Engineering, Manufacturing Services, Occupational Health and Safety, Security and Environment, and the Operations Excellence and Learning teams.
Lone Jespersen, Ph.D. (Moderator) Principal and Founder Cultivate Lone Jespersen is a published author, speaker, and the principal and founder of Cultivate SA, a Swiss-based organization dedicated to help organizations in the global supply chain make safe, great-tasting food through cultural effectiveness. Lone has worked with improving food safety through organizational culture improvements for 18 years since she started at Maple Leaf Foods in 2004. Lone chaired the Global Food Safety Initiative (GFSI) technical working group A Culture of Food Safety, chaired the International Association of Food Protection (IAFP) professional development group Food Safety Culture, and is currently the technical author on the BSI PAS320 Practical Guide to Food Safety Culture. Lone holds a Ph.D. in Culture Enabled Food Safety from the University of Guelph in Canada and a Master in Mechanical Engineering from Syd Dansk University in Denmark. Lone serves as Vice Chair of the IFPTI board and as director on the Stop Foodborne Illness board.
