Enterprising startups are exploring innovative ways to realize a circular economy and create value-added products using byproducts from food processes or ingredients that would otherwise be thrown away. We bring together innovators and entrepreneurs to explore how they are contributing to the circular economy and building new supply chains using upcycled* ingredients, how they communicate the benefits to consumers, and what opportunities they are exploring.

*As defined by the Upcycled Food Association (UFA), upcycled foods “use ingredients that otherwise would not have gone to human consumption, are procured and produced using verifiable supply chains, and have a positive impact on the environment.”

TJ is a former NHL forward, playing with the Colorado Avalanche, San Jose Sharks, and Calgary Flames following his time at Dartmouth College. As Co-Founder of Outcast Foods, TJ has quickly become one of the young leaders in food and agriculture with his unique outlook on sustainability. Additionally, TJ has been a guest lecturer on food waste at Rice University, a speaker at the Tuck School of Business, and an active angel investor and real estate developer for 10 years.

Juan spun out Capro-X from Cornell after completing his PhD in Biological and Environmental Eng. He is focused on bringing novel technologies at the food-water-energy nexus into reality, with a particular goal of improving the sustainability impact of the food and beverage industry.

Kaitlin Mogentale is a self-proclaimed food waste warrior and the founder of Pulp Pantry. Pulp Pantry transforms upcycled ingredients — the overlooked, nutritional byproducts of fruit and vegetable processing — into wholesome, better for people and better for the planet, snack staples. The brand's flagship product is a line of veggie chips reinvented, made from nearly 50% upcycled ingredients providing nearly a full day’s serving of fiber in each bag. Leveraging a unique sourcing model, in 2020 Pulp Pantry upcycled 50,000 lbs of fresh vegetables that would have otherwise gone to waste. Pulp Pantry launched in online retailers including Thrive Market, as well as West Coast retailers including Whole Foods Market and Target at the end of 2020.
