Abstract:

With growing interest in healthy eating, the market for nutritious foods is on the increase globally and cheese is one of the categories increasingly emerging as a healthy and nutritious food. While cheese has long been used as a snack the market has now developed to encompass a wide range of individually portioned ready-to-eat cheese products suitable for consumption in the home, on the go and in lunchboxes, including slices, lunch kits, dips, mini portions, shapes, sticks and strings. There are many challenges manufacturers face in the development of these ready-to-eat cheese products and Glanbia Ireland has developed CheddMax to help manufacturers deliver the taste and functionality the consumer demands, while overcoming these manufacturing challenges. 

In this webinar we will demonstrate how CheddMax, when utilised in customers applications, such as natural formats or processed cheese, can impart significant functionality, productivity, cost, flavour and nutritional benefits that can be passed through to the end consumer.

Shane McDarby leads the Product Management team in Glanbia Ireland. Since graduating from UCD with a Masters in Food Science, Shane has built over 15 years of experience in the Irish dairy industry in both technical and commercial roles.

Fionán Ó’ Súilleabháin

R&D Cheese Technologist

Fionán Ó’ Súilleabháin graduated from UCC with a BSc in Nutritional Sciences in 2017. Fionán has come through both the Glanbia Internship and Graduate Development Programmes, working in a number of different roles across Glanbia Quality and Research & Development Departments. Fionán has over 4 years’ experience working with Glanbia and his passion lies within R&D. As an R&D Cheese Technologist, Fionán works across the Ingredients and Consumer divisions, and in recent years has been involved in the development of CheddMax - Glanbia’s range of natural cheese solutions.

Michael Walsh

Product Manager- Cheese & Butterfat

Michael Walsh is product manager for cheese and butterfat at Glanbia Ireland. Since graduating with a BSc in Food Business and a Diploma in Dairy Science from UCC Michael has built up over 30 years of experience in both operations and commercial roles within the UK and Irish Dairy Industry. Michael has first-hand market knowledge having dealt with Cheese and Butter Customers globally for many years and is experienced in formulating and delivering on strategy.This market knowledge and technical capability allied with a passion for cheese helps drive cheese strategy and the cheese innovation pipeline at Glanbia Ireland.

Ann Meaney

Head of Marketing- Ingredients

Ann Meaney leads the Marketing & Digital function at Glanbia Ireland Ingredients. Since graduating from DCU with a degree in International Business and Languages, Ann has worked in a variety of international marketing roles with Diageo, C&C Group and Aryzta building well known consumer brands such as Guinness, Magners Cider and Starbucks.

Rebecca Barron

Nutrition Manager

Glanbia Ireland

Rebecca Barron joined the R&D team in Glanbia Ireland as Nutrition Manager in 2019. Prior to this, she worked in a number of industry and research roles across various areas in nutrition including research surrounding the cheese matrix. She graduated from University College Dublin with a BSc in Human Nutrition and holds an MSc by research in Nutritional Metabolomics.

Barry Foley

R&D Manager Fresh Soup & Desserts

Barry Foley R&D manager Fresh Soup & Desserts has been working with Glanbia Ireland over 15 years as the company’s lead development chef. Prior to Glanbia Ireland, Barry spent 11 years working as a professional chef. He works cross functionally across the ingredients and consumer divisions providing culinary expertise while developing product and solution opportunities for customers.
