What’s new in the snacking world and how are consumers fitting snacks into their day? Is the trend of ‘fresh snacking’ the future, or are pantry items still the bread and butter of the category?

FoodNavigator-USA has gathered together a panel of snacking industry stakeholders to discuss the hottest new trends in the market from refrigerated veggie and fruit bars to the next evolution of seaweed snacks while identifying opportunities for growth in the next three to five years. We’ll also dive into nutrition – what exactly is a ‘healthy snack’ and what are some nutritional gaps snack brands may be missing?


Lynn Dornblaser

Director of Innovation & Insight

Lynn Dornblaser brings 30 years of product trend knowledge to Mintel, which she joined in 1998. She applies her unique perspective on the market and new product development to tailored client research and to extensive public speaking. Prior to joining Mintel, Dornblaser covered new product trends at several trade magazine publishing companies, as editor and editorial director of publication New Product News. She has been quoted by major US news organizations, including The Wall Street Journal, USA Today, The New York Times and CNN. In addition, Dornblaser has also served as keynote lecturer and speaker for numerous industry groups and sales forums.

Dornblaser holds a BS in Journalism from the University of Illinois and has also contributed to a textbook on new product development. She can usually be found in the aisles of a supermarket somewhere in the world.

She has been involved in the food industry since she was 10 years old, baking Swedish coffeecakes for her father to sell at his Swedish butcher shop. Dornblaser is also an avid fly-fisher and enjoys standing in stream with her fly rod and waders.

Amy Peick, RD, LD

Coborn’s INC

Amy is a Retail Dietitian based out of Central MN supporting three banners across Coborn’s Inc. She started with Coborn’s in 2016 to help drive their mission of inspiring happiness and healthy living. Her position allows her to work closely with Category Managers and Directors across all departments to bring health and wellness to the forefront. Amy, along with their two other retail dietitians, strive to bridge the gap between retail dietitians, vendors and national health organizations with partnerships throughout the year. In addition, Amy provides individualized in-store nutrition services for employees and guests as well as nutrition education presentations and events for her communities.

Brenden Schaefer

Founder & CEO
Bright Foods

Brenden Schaefer is the founder and CEO of Bright Foods. The company's first product line, Bright Bar, is a refrigerated nutrition bar that's like a cold-pressed juice in whole form, and launched earlier this year at Whole Foods.

Prior to founding the company, Brenden spent nine years working for PepsiCo in New York, Hong Kong, Shanghai, and Los Angeles. He began his career as a senior analyst in CEO Indra Nooyi's corporate strategy group and progressed through a series of brand management roles of increasing responsibility. From 2011-2015, he worked in the company's Venturing and Emerging Brands group, leading marketing for Naked Juice (the fastest-growing brand in the PEP portfolio), leading the IZZE business during a period of unprecedented growth, and co-leading the O.N.E. Coconut Water brand following acquisition.

Prior to PepsiCo, he worked at L.E.K. Consulting, an international strategy consulting firm that spun out of Bain & Co.

Tim Minges

Nora Snacks

Tim has spent his entire career in the food industry, including 32 years at the senior most levels of PepsiCo, before “retiring” in 2016 to begin his new career developing and nurturing emerging food and beverage brands. He is the co-founder of Nora Snacks, a joint venture he formed with Asia’s leading seaweed snack company, Taokaenoi PCL, a listed company in Thailand. Nora will launch in the North America market this Fall.

In addition to Nora, Tim is an advisor and member of the board of Copra, Inc., a global supplier of premium B2B organic cold chain Thai coconut products. Tim also serves on the board of two publicly traded food companies: Barry Callebaut AG, Zurich; the world’s leading B2B supplier of cocoa and chocolate products, and Master Kong Beverages, Shanghai, China’s largest beverage company.

Prior to retirement, Tim was Chief Customer Officer of PepsiCo’s North American beverage business and spent 20 years in Asia in a variety of roles including Chairman and CEO of PepsiCo China and President of PepsiCo Asia-Pacific.

Tim’s time in Asia led him to develop an affinity for Asia and Asian food and beverage products and drives him today as he looks to identify trends and products from Asia that can make an impact in the North America market.

Tim is a former board member of a series of Asian listed entities including Calbee, Japan; Serm Suk, Thailand; PCPPI, Philippines; as well as a former board member of the North American Coffee Partnership, PepsiCo’s joint venture with Starbucks.

Tim and his wife travel extensively in conjunction with his business commitments, but are never far from a trail, as they are both avid runners, bikers and hikers.
