Happy April Fools’ Day! Join AARP Colorado Thursday, April 1, 2021, 6:30 p.m., for Eating for More Energy, with culinary nutritionist, Michelle Fox, a hands-on cooking webinar. Shop for the ingredients and then join us, ready to blend and bake with Michelle. This month we will be making breakfast for dinner and that’s no joke! Learn the power of liquid nutrition to sustain energy throughout the day. We will be making an elixir, a smoothie and what could be the most delicious blueberry muffins you’ve ever tasted.
For the Elixir: 1 tsp cacao powder or Hershey's Cocoa Dark Chocolate Powder 1 tsp Maca powder (optional) 1 tsp hemp seeds, hemp hearts, chia seeds or unsalted pumpkin seeds Dash of cinnamon 2 Tbsp ghee or butter 1 Cup boiling water 2 dates For the Smoothie: 1 Cup almond milk, rice milk, or cashew milk (or alternative milk) 1/2 banana or 1/2 avocado 1/2 Cup filtered water 1 date Handful of greens (spinach, chard, or kale) 1 Tbsp unsalted pumpkin seeds, chia seeds or pepitas 1 Tbsp coconut oil or avocado oil 1 scoop chocolate protein powder, 10 g protein (Vega is my fave) 1 scoop collagen, 10 g (Great Lakes is my fave) or additional scoop of your favorite protein powder 1 tsp Maca powder (optional) For the Muffins: 1/4 Cup almond flour 1 1/2 Cup gluten-free All-Purpose flour 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1/2 tsp sea salt 1 Tbsp chia seeds or 1 egg 2/3 Cup maple syrup 1/2 Cup applesauce 1/3 Cup filtered water 1 Tbsp apple cider vinegar 1 tsp vanilla extract 1/4 Cup coconut oil 2 Cups blueberries, fresh or frozen Muffin liners (preferably parchment)
